At O'Brien Butchers, we believe in delivering the utmost quality, which is why our beef is dry aged for 28 days to ensure incredible flavor and tenderness. Our grass-fed beef and lamb go through a meticulous process, starting from being sourced from local farmers, then being slaughtered and dry aged in our E.U approved abbatoir at Bonnetsrath farm. Finally, they are processed for delivery to our two stores located in Loughboy and Market Yard Kilkenny.

Our customers' favorites include the boned and rolled rib roast, rib roast on the bone, striploin steak, fillet steak, rib steak pieces, and round steak mince. Additionally, we take pride in making our own gluten-free steak burgers and our top-selling beef meatballs. When it comes to lamb, our offerings include fillet of lamb, center loin lamb chops, side loin lamb chop, rack of lamb, and diced shoulder of lamb.

For pork enthusiasts, we source our pork from bord bia assured local suppliers and produce our own homemade sausages and black and white puddings. Our range of pork products includes pork loin chops, rack of pork, and pork steak stuffed with our sage and onion stuffing. We also cure the pork loin, pork leg, and pork belly to create our low-salt bacon and hams using our traditional recipe. Not to be missed are our center cut ham, back bacon joint, back rashers, streaky rashers, and our smoked back and streaky rashers. We also cure topside of beef to produce our award-winning corned beef and spiced beef.

At O'Brien Butchers, we also offer a selection of poultry sourced from local bord bia approved suppliers. Our customers rave about our chicken fillets, chicken thighs, and free-range roasting chicken. We use chicken fillets to create other popular products such as chicken encroute made with pastry and homemade stuffing, chicken Kiev's made with homemade garlic butter and panko breadcrumbs, chicken and bacon wraps made with our own home-cured bacon and homemade stuffing, and chicken toastie made with chicken thighs, stuffing, and smoked streaky bacon.
