Luke Nguyen, our talented head chef and owner, was born in Thailand in 1978 after his parents fled Vietnam as boat people. He is also the mastermind behind the renowned Red Lantern Vietnamese restaurant and is considered one of Australia's top celebrity chefs. Luke's Vietnamese heritage and family history in China serve as inspiration for the fusion flavors and taste combinations found in Fat Noodle.
In addition to his culinary ventures, Luke hosts 13-day culinary discovery trips to Vietnam for adventurous cooks. These trips provide a unique opportunity to explore the flavors and traditions of Vietnamese cuisine firsthand.

"I have been frequenting the renowned establishment of "Fat Noodle" for an extended period, spanning several years, and without hesitation, I must express my unequivocal appreciation for the exceptional culinary delights featured on their menu. Among the delectable offerings, there exists a particular dish that has won my heart and palate over - the esteemed Singapore Laksa. In my humble opinion, after having sampled various renditions across the city of Brisbane, I firmly contend that the Singapore Laksa served at "Fat Noodle" stands unrivaled, encapsulating an unparalleled symphony of flavors that elevates it to the pinnacle of gastronomic excellence in this vibrant culinary landscape."
"- Atmosphere and service 5/5 as the service was fast, the staff friendly and the atmosphere was warm and friendly. - in terms of the food it did not feel authentic enough and I feel the ingredients used are not fresh. However, the presentation was amazing. - the way to describe my beef pho was I felt the chef or the recipe used by the chef was not authentic enough, I’ve tasted better pho in sydney and Melbourne in a take away place for 10 dollars with cheaper ingredients used by the cooks in the takeaway restaurant. I’m not saying the food was bad because I gave it a 3/5 but felt like the chefs or the recipe used lost its authenticity somehow. I felt the food tasted like it was prepared by any well trained culinary person regardless of their ethnic background but it’s just not authentic. My overall rating would be a 3.5/5, the l food was decent and the price was decent but it’s not a place I would come eat again."
"It's worth joining the Star Club (it's free to join at the Star counter in the Casino) to take advantage of the member specials. I've been to Fat Noodle on several occasions with large groups and small groups. On this occasion we came on a Saturday arvo/ early evening. We didn't have a booking and happened to get lucky with our group of 5. We all got the Massaman Lamb shanks which is available during the month of May at the members price of 19.90. The lamb shank was falling apart and they were generous with the massaman sauce. It wasn't spicy by my standards but a couple of the others thought it had a bit of a kick. One of the diners bit into a needle bone and it wasn't pleasant. Another found the needle bone and took it out. I told a staff member who apologised for not warning us about it. Not ideal. I've otherwise had pleasant experiences dining here."
"For a celebrity chef's restaurant, I was very disappointed by my experience. Although service was immaculate, I found the sugar in the masaman lamb curry overpowering, hainanese chicken rice insipid, dumplings doughy and rather tasteless and a bowl of rice as side dish of poor quality. I felt the dishes overpriced considering the quality were made for western taste buds rather than an honest Asian fare."
