"I’ve known the Kilkoy guys for many years on now and the beef they grow is absolutely stunning - some of the best in this country and dare to say the world! Just got my share of a whole wagyu striploin/siroloin/New York strip (was a present so not graded, however based on the marbling I am guessing a 6 marble score at the least). This beef is stunning - the flavour is earthy, mildly beefy, a bit of grassy hint and deliciousness on the back pallet. Goes essentially well with an old bottle of French wine or a glass of deep shiraz from barrosa / McLaren Vale! Would not be able to highly enough recommend these guys! Look forward to the stunning feast. ps. Tips for storage: never allow water to touch your meat. Always slice to your desire (mine is 350g) with a dry knife and then put in paper towels for a few days to dry age in the fridge. I do also salt it with rock salt, especially the fat side."
